We make our paneer fresh in-house every day — no shortcuts, no preservatives. The cottage cheese is set, pressed, and cubed within hours of curdling, which gives it a soft, milky texture that melts in your mouth.
Lababdar literally means 'lip-smacking' in Urdu, and the recipe lives up to the name. The masala is built layer by layer: tempered whole spices, slow-cooked onion-tomato base, cashew cream for body, and a hand-crushed dried fenugreek finish that gives the curry its signature aroma.
