Great lamb curry takes patience. We start by tempering whole spices in mustard oil, build a deep onion bhuna, then add the lamb to seal in the spice. From there it cooks low and slow until the connective tissue melts and the meat carries the flavour of every spice in the pot.
The result is a thick, glossy gravy with the kind of complexity that only emerges through hours of cooking. Spice level is balanced — assertive but not searing — so the natural sweetness of the lamb still shines through.
