We start with the same slow-proofed naan dough we use for our garlic naan, then fold in a generous handful of cheese before stretching and slapping it onto the tandoor wall. The high, dry heat seals the bread quickly so the cheese melts but does not leak out.
The result is a naan with a soft, blistered crust and a pull-apart, gooey centre — best torn open while still steaming, then dipped into a rich curry.
Mozzarella Cheese Naan is one of those dishes the kids order first. Pair a couple with a mild Butter Chicken or Navratan Korma and you have the perfect family meal at the buffet table or for delivery at home.
